Butternut shepherd's pie
Description
A beautiful, healthy version of the family favorite. Low in everything but flavor. I also make this recipe vegatarian by replacing the ground meat with equal amount of broken veg burger.
Ingredients
3 to 4 cups butternut squash cubed
1 1/2 cups mixed frozen vegetables
1/3 cup onions
1 tbls light butter spread
1/4 tsp salt
3/4 cup fat free gravy
1 glove minced garlic
pinch of pepper
pinch garlic powder
pinch onion powder
1 pound extra lean turkey or chicken
Instructions
preheat oven to 400
steam or microwave (in a covered dish with a small amount of water) the butternut squash until soft. When cooked, drain, mash well and mix in butter and salt.
brown onion over med heat, add meat, pepper, onion,garlic powder and minced garlic. Cook until meat is done (browned) If using veg bugers they are usually precooked so it is just a matter of mixing it in.
Drain any water or fat from meat mixture, mix in gravy and place mixture in cassserole dish.
Place frozen vegetables over the meat mixture and then spread squash over top of the vegetables.
Bake 25-30 min.
