Great lunch after a workout, or when the heat has got you down

Ingredients

2 med cucumbers, peeled and seeded

2 cups plain low fat yogurt

1 1/2 Tbsp fresh dill 

2 tsp chopped fresh mint

1 cup vegetable or chicken stock

pepper to taste, salt if desired

 

Instructions

Grate cucumbers and combine all ingredients. Cover and refrigerate 4 hrs or overnight, Serve cold.
