Description
This is one of my most favorite low-fat comfort foods. It has a ton of flavor, not too many ingredients, quick and simple to make, and so satisfying! Get the protein you need for all the workouts to come for the next 26 weeks in this one!! Great on it's own or with the nutty flavour of brown rice.
Ingredients
2 lbs ground turkey
½ yellow onion chopped
½ tsp ground cumin
Cayenne pepper and red pepper flakes (to your taste for heat)
1 tbsp canola oil
2 cans white kidney beans
½ cup frozen corn (or fresh red pepper for a variation)
2 Cups low sodium chicken stock
Fresh cilantro
Salt and Pepper to taste
Instructions
In a large pot or Dutch oven heat oil add turkey, onion, spices and cook until turkey is cooked. Add chicken stock beans and corn. It will be very soupy but will thicken considerably. Bring to the boil then reduce heat to med-low and simmer uncovered for approximately 40 min. Stir in fresh cilantro and serve.
