Ingredients

1 onion chopped

2 stalks celery chopped

2-3 cloves garlic diced

Saute until tender, in 1 tbsp olive oil.

Add 1 28oz can of diced tomatoes

2 cans of water (using tomato can )

2 cups frozen mixed vegetables

1 cup chopped cabbage

You can add green pepper, mushrooms or any vegetable you like.

 1/2 cup brown rice

1 19 oz can kidney beans

parsley

basil

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

Instructions

Bring to a boil, reduce heat and add 1/2 cup brown rice and 1 19 oz can kidney beans. Continue simmering until rice is done, adding more water if necessary, add parsley and basil. Enjoy!
